Harmonica

There is this John Williams box set released in Europe that contains 20 cds and highlights John Williams' career from his television scoring days through the work he done for Anne Sophie Muter reworking some of his most famous work for violin and orchestra.  While John Williams work is among my most favorite in the world, I notice in the early years of film scoring he had an unusual affinity for the harmonica against the orchestra.  Almost as if he wanted the harmonica to evolve into the instrumentation of a traditional symphony orchestra.  There's 4 like three different scores:  Sugarland Express, The Reivers, Cinderella Liberty, and The Cowboys.  An unusual instrument to feature....

Which begs the question - why has the instrumentation of the symphony orchestra remained the same since the romantic period?
